Garam Masala :
In our family, each one makes their own version of Garam Masala. It is always home made and occupies pride of place in the kitchen. Here goes mine.
You will need :
Cinnamon - 6 gms
Cloves - 3 gms
Cardamom - 3 gms
Mace - 6 gms
Nutmeg - 3/4 tsp powdered
Aniseed - 1 and 1/4 tsp
Cumin seeds - 1 and 1/4 tsp
Method :
Heat a pan.
Dry roast all the above ingredients.
Stir constantly taking care not to burn them.
Switch off the flame once nice aroma fills the air.
Transfer to a flat plate.
Grind the roasted spices to a fine powder in a mixer.
Store in an air tight container and use in curries or anything that you feel is right.
Note :
- I make very small quantities of garam masala as I feel the powder loses its flavor over time.Also, I use it in small quantities.You can adjust the proportions to make large quantities.
- I have used this powder in Biriyanis and have not missed the biriyani masala.
