We don't need a melting pot in this country, folks. We need a salad bowl. In a salad bowl, you put in the different things. You want the vegetables - the lettuce, the cucumbers, the onions, the green peppers - to maintain their identity. You appreciate differences. - Jane Elliot

Ingredients :


Onions – 2 ( Cut long and thick)
Tomatoes – 3 (Cut long and thick)

Cut the below vegetables into 1 ½ inch pieces
Potatoes – 1 cup
Carrots – 1 cup
Drumsticks – 1 cup
Beans – 1 cup
Brinjal – 1 cup
Raw Plantain – 1 cup
Malabar Cucumber – 1 cup
Snake Gourd – 1 cup
( You can also add yam if you like)

1 tsp chilli powder
½ tsp turmeric powder
2 ½ tbsp coconut oil
1 tsp salt ( Adjust salt according to taste)
Water – 3 /4th cup
Curry Leaves – 2 stalks

To grind :



Small Onions - 3/4th cup
Garlic – 6 Large pods
Jeera – 1 tsp
Green Chillies – 6 (small ones)
Grated Coconut – 2 cups
Curd - ½ Cup curd ( Sour preferred )




Grind the above ingredients into a coarse paste and keep aside.

How to do it :



Heat Saucepan and add all vegetables, onions, tomatoes and water.
To this add chilli powder, turmeric powder, salt and 1 ½ tbsp coconut oil.
Mix well. Cover and cook till the vegetables are done.
When the vegetables are cooked, add the ground mixture.
Add curry leaves and 1 tsp coconut oil and mix well.



Now cook covered for 4-5 minutes on simmer till the raw smell of the ground mixture goes off.
Switch off and serve hot with rice.
