Moist Banana Cake

Every time we come back from Kerala, our car becomes a mini goods truck. The boot is loaded with all the stuff that can stand the distance.

One thing that is always there is home grown bananas. The kids love them but at times we have so much at hand that I cannot the stand the sight and smell of over-ripe bananas. You see, I am not a banana person. That is when the bananas are hurriedly married off to pancakes or cakes.

Here is an easy recipe to use up those over-ripe bananas.  


Ingredients :


Sift together the below :

Maida - 1 Cup
Baking Powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt - a pinch

Powdered Sugar - 3/4th cup
Butter - softened - 1/4 th cup
Egg - 1
Vanilla - 1 tsp
Curd - 3-4 Tbsp
Bananas - 5 ( Small ones) - Pureed ( equals 2 large ones )

Method : 


1. Keep the sifted flour aside.
2. Cream together the butter and sugar. To this, add egg and vanilla essence. Mix well.
3. Add the curd and mix well.
4. Add the sifted flour and banana puree alternatively and keep mixing.
5. Pour the batter in a greased baking dish.
6. Bake for 40-45 minutes at 180 deg C or till the toothpick inserted comes out clean.
7. Serve.
