Sour Cream Cake

After 5 weeks of staying home , we have fallen into a routine. While the mornings are usually busy with classes and work, it is the afternoons when we all turn a little groggy. The children are listless and it is my nap time. Now, that is not a very convenient combination. Is it ?  So, To keep the peace and my sanity, what do we do ? We bake.

Eh...not the ideal time to bake if you ask me. But then, who is asking me? The what is the easiest  question here, as Daughter dear does not like chocolate. What ? You heard me right. So it is all combinations of Vanilla that is primarily allowed in my kitchen. A quick promise to my Son, that we will bake something with chocolate next time, I drag myself off the couch. Now, I handled that deftly, Didn't I? Before I know it, the cake pans are pulled out, the butter is on the counter, the eggs are out of the refrigerator. This room temperature requirement buys me some time for shut eye. Another deft move. I am a pro now. After a while ( Seemed like minutes to me), we are back in the kitchen, for a misguided afternoon baking project.

To the misinformed, I would like to make a point. When you have a little helper in the kitchen, it is fun. When you have twins, not so much. And when it is a boy and a girl, each with an opinion of their own, you are better off on your own. All the male and female traits, that so subtly defines and differentiates us is on full display mode in my kitchen on such afternoons. The boy who has to follow rules and the girl who deviates at every chance possible, the boy who has to lead and the girl who refuses to follow, the boy - who struggles with the mixing but has to do it, the girl who does it effortlessly but never bothers to, the boy who rigidly believes in the division of labor and the girl who defiantly does not. Well, you get the picture. So between all this, if a cake or cookie is the by product - I will take it.

Today's recipe is a simple one. Just the basic cake steps, easily my choice for a nap deprived afternoon. Here we go.





Ingredients : 



Butter - 1/2 Cup - 1 stick - Room temperature - Unsalted
Sugar - 1 Cup
Eggs - 1 Large - Room temperature
Baking Powder - 1 tsp.
Salt - 1/2 tsp
Vanilla - 1.5 tsp
Flour Unbleached - 2 Cups
Sour Cream - 3/4 Cup - at room temperature


Method :


1. Preheat Oven to 350 Degrees Fahrenheit. Lightly grease a 9 inch loaf pan and keep ready. 

2. In a bowl, cream together the butter and sugar till light.

3. To this, add the egg and beat well.

4. Stir in the salt, baking powder and vanilla.

5. Starting with the flour, add the flour alternating with the sour cream and mix well. The batter will look stiff. Do not panic. ;)

6. Once combined, scrape the batter into the prepared pan.

7. Bake the cake for 25 - 30 minutes till a skewer inserted in the center comes out clean. Oven temperatures vary, so keep an eye out during the final stages of the baking process.

8. Remove cake and allow it to cool. Remove from pan and slice. Serve and enjoy.
