Basa Fish with Cajun Spiced Sauce
When you fish for love, bait with your heart, not your brain.
Mark Twain
My new love is Basa. I had too much of this fish when we were in Goa on a vacation. Liked it instantly.
The main attraction for me is that I can just grill / bake this fish instead of what I always do with fish.
I do not have to grate coconut. I do not have to grind it. While the fish curry that I normally make takes atleast half an hour minimum, this dish takes 10-15 minutes excluding the marination time. And to top it all, It is healthy.
Oh, I am so in love. We will get to the recipe now.
Ingredients :
Basa fish - 1 fillet ( 250grams approximately )
Marinade
Juice of half a lemon
Pepper - 1/4 tsp
Garlic - 3 crushed
Parsley - 2 generous pinches - dried
Salt to taste
Butter - as needed to rub over the fillets
Marinate fish for 30 minutes.
Preheat oven to 450 deg
In an oven proof dish, place the marinated fish fillet and rub both sides of the fillet with butter.
Cook at 450 degrees for 4 minutes on each side.
(Pls note the time varies based on the size and thickness of the fillet. Adjust accordingly )
Keep aside.
How I made the sauce :
Ingredients :
Tomatoes - 4 Medium ( Finely chopped)
Onion - 1
Garlic - 3 large pods crushed
Brown sugar - 1/4 tsp
Soy sauce - 1/2 tsp
Cajun spice - 1 - 1 1/2 tsp
Pepper - 1/2 tsp
Parsley - 1/2 tsp - dried herb
Butter - 1 tsp
Salt - As per taste
Method :
Heat butter in a pan.
Add onions and saute till the onions sweat. Add crushed garlic and saute well.
Add the tomatoes and cook for a few minutes till tomatoes turn mushy.
Add the Cajun spice, soy sauce, brown sugar, salt and pepper. Mix well.
Now simmer on low flame for 8-10 minutes.
Add parsley. Adjust seasoning.
Switch off the flame.
Serve the fish fillet.
Pour sauce over the fish and serve hot.
We had the fish with tossed vegetables.
Notes :
1. The Sauce recipe is my own. So you can play around with the basic recipe and add other herbs that you like.
2. The sauce was not runny, I like it that way. Again, choose how you want yours.
3. The tomatoes can be blanched and then used to make the sauce. Definitely tastes better.
