Kovakka Stir Fry

I first had Kovakka after I got married. ( Again, I am a fake Mal) 
Husband dear likes the veggie and the first time I tasted it, I did not like it one bit. But then repeated eats and occasional threats from my husband ( Cos it is one healthy veggie) slowly turned me around.


Even now, It is not something I crave for. But then we are cordial towards each other.
Here is the recipe.





Ingredients :


Kovakka -  2 large cups ( approx. 400 gms)
Chilli Powder - 1 tsp
Onion - 1 - chopped small
Coriander Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Curry Leaves - 1 spring
Mustard Seeds - 1/2 tsp
Salt to taste


Method :


1. Wash the Kovakka. Cut off the tips and slice it lengthwise. Keep aside.
2. Heat oil in a pan. Splutter Mustard seeds when the oil is hot. Add curry leaves and onions. Cook till the onions sweat.
3. Turn the flame to a simmer and add kovakka.
4. Add all the spice powders with salt and mix well.
5. Cook covered on medium flame till the vegetable is cooked. The vegetable takes quite sometime to cook. So plan some parallel activity while you are at it.
6. Once cooked, turn the flame to high and cook till the Kovakka turns slighty brown. Stir constantly taking care to avoid burning.
7. Serve hot with rice.
