I had to update the old Guacamole version on the blog to better suit what I have been doing at home. My initial recipe back in Bangalore was something I found on the web. There is a season when Maami sends home Avocadoes. She has a tree in her backyard. Fancy that. But back then, I was not a big fan. I do not dislike it, but then not crazy about it either. Fast forward a few years, and here I am, hunting for them every weekend. It stays on top of my weekly shopping list.
Here is the most basic recipe. And like all dips, there are a thousand variations.
I do add smoked paprika for that smoky flavor sometimes. Cajun spice too when I feel like it. Never been disappointed. I almost always add tomatoes too. But not always. Have we not heard this statement before. Coming from me, should not surprise you anymore. Go, do what you please. What is life without a little adventure ?

Ingredients :
Avocado - 1 - Big
Onions - 1/2 -Small - Finely chopped.
Garlic - 1 Pod - grated
Salt and pepper to taste
Lime Juice - 1/2 tsp or more ( Adjust according to taste)
Coriander Leaves - 3 stalks - finely chopped
Method :
1. Cut the Avocado in half. Remove the pit. Scoop out the insides and transfer to a bowl.
2. Mash the scooped out insides with a fork till you work up a consistency you like.
3. Add the diced onions and garlic.
4. Add the lime juice, salt and pepper. Mix well. Add coriander leaves.
5. Check for seasoning and adjust salt and pepper accordingly.
6. Serve with chips.
Notes :
1. The consistency can vary from chunky to creamy. Choose what you like.
2. The original recipe asked for Tabasco sauce to be added. I did not. The addition of Tabasco sauce comes strongly recommended. So, if you do have it, give it a try. I will one of these days. It is a hot sauce. So adjust accordingly.
