The WORLD Culinary ABC - Panipopo - Buns in Coconut Sauce

Yes!! It is a World Tour and why do you think I will say no to that.

The first time read about it, I mean just the title, I decided I am going. No matter I will be taken or not.
I jump at tours. Also, if the travel is for food and I can choose which leg of the tour to travel, Count me in.

We start with A. A is for Apia.

Apia is the capital and largest city of Samoa.  Samoa is an Oceanian country encompassing the western part of the Samoan Islands in the South Pacific Ocean. It became independent from New Zealand in 1962.

I always was of the opinion that no one uses coconuts like we Keralites do. Well , I found some place on earth where people seem to use coconuts in everything.

I had actually planned on making Masi Samao. But to my dismay, the host had already posted it.
So I had to push myself to make Panipopo ( Coconut Buns).  Believe me, It was like I was taking an exam and the result depended on how the rest of my life is going to span out. I hovered around the kitchen till the buns came out. And, I was relieved. They turned out delicious. My life is just right, till the next recipe. 

While looking around in Google land, I came across this site which has a whole lot of recipes dedicated to Samoa. Check this out if you are interested.



Here is the recipe.

Ingredients :


Active Dry Yeast - 2 1/4 tsp
Warm Water - 240 ml
Sugar - 1/4 cup
Egg - 1 - lightly beaten
Salt - 1/2 tsp
Vegetable oil  - 2 Tbsp
Maida / All purpose flour - 2 1/2 cups - 3 1/2 cups - approx 415 gms - Includes the flour required for dusting.

Coconut Sauce - Recipe below


Method :


1. Add yeast to the warm water in a large bowl and leave for 10 minutes. The yeast will froth to the surface.
2. Now add all the other ingredients and mix well.
3. While adding the flour, start with 2 1/2 cups and slowly work your way through till you get a soft and elastic dough.knead well. It is very important that you do not add all the flour together at once.
4. If you prefer, you can turn out the dough on to a lightly floured surface and knead the dough well.
5. Place the dough in a lightly greased bowl and leave to double in volume. Mine took about an hour.
6. Punch the dough down and shape the buns.
7. Cut the dough in to long strips. Now roll each strip into a ball.
8. Now place these rolled balls in to an non-greased tin and leave to double in size.

Now make the coconut sauce.

Coconut Sauce :

Fresh Coconut Milk - 200 ml  ( You can also use packed )
Water - 200 ml
Sugar - 75 gms ( The actual recipe called for 100 gms)

Mix all the three ingredients together and keep aside.

Preheat Oven to 200 deg C.
By now the buns would have doubled in size.
Pour the coconut sauce over the buns and bake for 20- 25 minutes till the buns turn golden on top and the sauce bubbles up at the edges.
Cool for 30 minutes and serve with the coconut sauce.
