Rave Idli :
It is a speciality of the state of Karnataka in India. Mavalli Tiffin Rooms (MTR) of Bangalore claims to have invented it. According to Mavalli Tiffin Rooms, during World War II, when rice was in short supply, they experimented in making idli using semolina and created Rava Idli.
Rave-Idli translates to semolina-idli in the native Kannada language.
Bangalore Rural - Bangalore Rural District is one of the 30 districts in Karnataka. It was formed in 1986, when Bangalore district was divided into Bangalore Rural and Bangalore (Urban). The four talukas under Bangalore Rural are Devanahalli, Doddaballapura, Hoskote and Nelamangala. All the names that we Bangaloreans are familiar with. Each of the Talukas are undergoing tremendous growth. Whole lot of projects are lined up to change the face of this district.
The Bangalore Rural district is essentially an agriculture district but it has sufficient scope for industrialisation, dairy development and sericulture. The district is endowed with agricultural and horticultural crops such as ragi, rice, groundnut, sugarcane, castor, grapes and mulberry.
So here is one dish that belongs to Bangalore. The easy and famous Rava Idli.

Ingredients :
Rava/Semolina/Sooji (white) - 1 cup
Curd - 1/2 cup
Water - 1/2 cup or more to form thick batter
Mustard seeds - 1/2 tsp
Chana dal - 1 tsp
Urad dal - 1/2 tsp
Curry leaves - 1 spring
Cashew, broken - 1 tbsp (optional)
Salt - as required
Oil - to temper - 2 tsp
Baking soda - 1/2 tsp
Method :
- In a pan heat oil, add the mustard seeds, wait for them to splutter. Add the chana dal, urad dal and curry leaves. Now add the cashew and once they change color add the sooji/ rava and roast for 4 minutes (under medium-low flame) until you smell a nice aroma.
- Transfer the roasted sooji to a bowl and let it cool down a bit.
- Once cooled, add the curd to the sooji, salt and mix well, gradually add water to form a thick batter. Let it sit for 10 mins.
- As the batter sits, it absorbs the water. Add more water to get a thick batter like consistency.
- Mix the batter well and add baking soda and mix well. Immediately pour in the oiled Idli plate and place in the vessel to cook.
- Wait until all the idlis puff up and cook completely. You can insert a knife/ toothpick in the center of the idli to check if its done.
- Once done, remove the idlis from the plate and serve hot with chutney. Pls note I did not use the Cashews. You can also add grated carrots to the batter.
