Mushroom Fry - Quick and Easy

What better way to celebrate the day, doing things you love. Or like me, do all the nothing that has to be done.

Today's recipe is for those days when you have better things to do than spend your time toiling over the kitchen stove. What a statement to begin a food post. My apologies. I just wanted to let you know that this recipe needs minimum effort. A Mal dish, with minimum effort y'all. What more can you ask for ?

I have always complained to my Mom and Ammamma, about how our food tastes great but then is also labor intensive. We are a very food proud state. I have no bones to pick about that claim. I would gladly agree. But then, when I think about all the hot favorites in Ammamma's kitchen, they are just oh so much work. I lose my appetite just thinking about all the work that goes into it. If someone else is cooking, then I am the fastest to get to the table. Arikadukka, Chakakuru thoran, Koorka - you get the idea. Not something I am going to spend my afternoon on. Eating - Yes!!! Cooking - Well, I will pass!!

To make up for all that negative energy in the above paragraph, here is today's recipe. Quick and easy!! The star is the flavor from the Pepper and the coconut Oil. So try not to replace it. And the results are great in proportion to the effort. You are welcome.




Ingredients : 


Mushrooms - Cleaned - 16 Oz. - Chopped into quarters
Onion - 1 - finely chopped
Garlic - 1 large clove - finely sliced
Green Chillies - 2 - long slit
Pepper Powder - 1/2 tsp to start with. ( Add more if you can handle the heat)
Curry Leaves - 1 Stalk
Coconut Oil - 1.5 Tbsp.
Mustard Seeds - 1/4 tsp.


Method : 



Heat a pan. Add coconut Oil and splutter Mustard seeds. Add onions and curry leaves and sauté till the onions are cooked.
Add the sliced Garlic and green chillies.
Now add the chopped Mushrooms and sauté.
Add salt and pepper powder.
Mix well.
Cook till the Mushrooms are cooked. Check for seasoning and add if needed.
To give a crunchy finish, turn the heat on high and fry the mushrooms, stirring constantly so that they do not burn. Turn off heat once the desired sear is reached.
Serve warm with rice.
