Vanilla Mini Muffins

Few weeks ago, If anyone had told me I am going to spend a good part of March and April locked in my home, I would have laughed in their face. The past few weeks has made me look at life with a new perspective. It feels like we have turned back the wheels of time. Life itself has slowed down to a trickle.  And we are here, back to the basics. Living life like our grandparents did. In many ways, It feels like a scene out of an alien attack movie - the streets void of people, the parks empty of screaming children, the trails silent with just the sounds of nature, the grocery aisles empty, the otherwise essentials have become non-essentials. To make it even worse, the whole world is in this together. Just a reminder, about how even in this day and age, Life itself can play a cruel joke and all that we can do is wait and watch it unfold.


While we are at it, the human spirit always finds a way to find some positive out of this mayhem. On the Internet, I see countless stories of kindness, multiple instances of courage and thoughtfulness, everyday people who do stand out from the rest just because they thought to do things different - all this makes me look forward with hope. Because as it has been said, " No winter lasts forever, No spring skips its turn". 

Now, on to today's recipe. What better thing to do on a lazy afternoon than bake ? 
Easy to put together, that is if you already have the butter at room temperature, this one comes together in minutes. I used some of the batter to make some chocolate chip muffins too. My daughter, just cannot stand chocolate. I know. So it is just vanilla for her. And the rest were made into chocolate chip muffins for the Son. Talk about keeping up the happiness quotient.


This batch made me 24 Mini Muffins and one 9 inch loaf tin cake. 





Ingredients :



All purpose flour - 2 Cups
Baking Powder - 1 tsp.
Baking Soda - 1 tsp.
Salt - 1/2 tsp.

Sieve the above ingredients 2-3 times and keep aside, ready for use.

Sugar - 1.5 Cups
Butter - 1/2 Cup - At room temperature.
Milk - 1 1/3 Cup
Eggs -2 - White and yolk separated
Vanilla extract ( Good quality) - 1.5 tsp

Method : 


Preheat Oven to 425 F.
In a deep bowl, cream together the butter and sugar. Beat until it turns light and fluffy. 
To this, add the egg yolk one at a time. Beat well after each addition.
Now add the egg whites, in two parts, beating well after each addition.
Add Vanilla extract and mix well.
Now, it is time to add the flour and milk. Alternate between the flour and milk, starting and ending with flour. 
Mix till well combined and there are no lumps.
Transfer the batter to the prepared muffin tray. Fill the batter only till half way in the tray, so that it does not spill over when baked. 
Put the tray in the oven at 425 F for the first 5 minutes. Then turn down the heat to 350F and bake for another 7-8 minutes, till the muffins form a dome and turn a nice brown. 
Dust the muffins with some powdered sugar, if you feel like it.

Notes : 

1. Oven temperatures vary, so keep an eye out towards the end of the baking time. 

2. Please note these are Mini Muffins and hence the less baking time. You can use the batter for regular muffins but the baking time should be around 12-14 minutes max. 

3. The loaf cake turned out great too. So if you do not have time to scoop them on to the Muffin tray, just drop the batter in the cake tin and bake. 

4. I did not measure the chocolate chips. I just threw some in as a last minute addition. Use your expertise here ;)
