Overnight Chia seeds Pudding

I have never been the one for breakfasts. There, I said it. No, I do not mean the eating kind. I mean the one to cook breakfasts. Imagine, waking up from a good night's sleep and spoiling it all by walking into the kitchen!!! To cook something for yourself, and worse for the entire family. It is double the pain if one has limited options. And do not get me started on Breakfast options from Kerala. I would rather go back to bed. I hope you overlook the Irony of the above statements.
Like they say, Humans always figure a way out. In walks into my life, the option of overnight Oats and what not. I am not a health conscious eater. I will any day go for that Bacon and Sausages. Whatever I lack, He makes up for it in abundance. Constantly reminding me about how I am not thinking about my age, how my eating habits are lacking. Ah, the audacity of it. I do not know of a Husband who has said it all out loud and lived to tell the tale. He must be the first.
And so, to silence Him and not wanting to be constantly reminded about my age, I have made the switch - To more Oats and Chia seeds for breakfast. Again, to be me, I need a win in this defeat. So I go for the easiest of the lot available. The recipes that do not demand much from me, when my head is obviously in the clouds. Today's recipe is one such. In the mornings, I just have to pull it out of the refrigerator and eat. And it is so forgiving. It can be customized to your liking. It is minimal effort too. Doesn't get easier than that, Does it?
Chia Seeds - 4 Tbsp.
Milk ( anything you use - Almond Milk, Coconut Milk - the options are endless) - 1 Cup
Maple Syrup or Honey - to sweeten it ( Adjust to your liking)
Fresh fruits - anything you like. ( Strawberries, Blue Berries, Black Berries, Raspberries, Apples are some of the options)
In a Mason Jar, add milk. To this add the chia seeds and mix well.
Allow it to rest for a couple of minutes and give a good mix again. Ensure that there are no lumps.
Add Maple Syrup or Honey and give it a good mix.
Close the lid and allow it to refrigerate overnight.
Next Morning, add the fresh fruits and enjoy.
This is the consistency I prefer. If you like it with more milk, just add more milk and mix well in the morning.
The options are endless. Experiment till you find one you like!!!
